Codex Alimentarius

The guides for good hygienic practices (GGP) which are issued in connection with the HACCP are drawn up for each individual food sector, and refer to the food hygiene principles of the Codex Alimentarius. In the early 60s, the FAO (the Food and Agriculture Organisation of the United Nations) and the WHO (World Health Organisation) passed resolutions to form a committee for the Codex Alimentarius. The committee was to present the directors-general of the FAO and the WHO with proposals for the compilation of food standards, primarily with the purpose of protecting the health. They therefore compiled a reference work: Codex Alimentarius, 1993, Guidelines for the application of the HACCP system.
